Foil Packet Chicken

These flavorful foil packets are ready for the oven or grill. Perfectly juicy chicken and tender, steamed vegetables make for a meal that's quick and delicious!

Ingredients

  • 4 - 12”x 12” squares of aluminum foil
  • 4 - boneless/skinless chicken breasts
  • 8 Tbsp fat free Italian dressing
  • 4 - medium potatoes (cleaned and thinly sliced)
  • 20 black/kalamata olives (pitted and drained)
  • 2 cups fresh/frozen (thawed) long cut green beans

Instructions

  1. Preheat oven to 400 degrees or preheat grill.
  2. Place 1 Tbsp salad dressing on each aluminum foil square.
  3. Top with chicken breast and 1 Tbsp salad dressing.
  4. Arrange potatoes around chicken breast.
  5. Top with 5 olives and 1/2 cup green beans.
  6. Fold foil over and seal well.
  7. Place on baking pan in oven or on grill and close the lid.
  8. Cook for about 25 minutes until chicken is no longer pink and potatoes are tender.
