Western Mug Omelet

This recipe is an easy and healthy breakfast. Preparing the omelet in the mug makes clean up easier and the experience more fun.

Ingredients

  • 7 tablespoons liquid egg whites, room temperature
  • 1 tablespoon chopped green onion
  • 1/2 cup chopped red bell peppers
  • 1/2 cup chopped mushrooms
  • 2 tablespoons lite low fat shredded cheese
  • 2 tablespoons nonfat milk

Instructions

  1. Combine ingredients in a microwave-safe mug coated with non-stick spray.
  2. Microwave on high for 1 minute and give the mixture a stir.
  3. Return to the microwave and cook for 1 to 2 minutes until the eggs are cooked through.
  4. Add a garnish and enjoy.
